Nicolas Martin, originally from Burgundy, expresses his culinary passion at l’Evidence, in the heart of Digoin.
Having forged his expertise in the most prestigious regional restaurants such as Jérôme Raymond in Luzy, Maison Lameloise in Chagny, and Maison Troisgros in Roanne, he has been able to combine high standards and creativity. Building on these experiences, he decided in 2020 to create his own establishment in Paray-Le-Monial, where he quickly gained a loyal clientele. Rewarded by Gault et Millau in 2022, he was designated Young Talent of the Burgundy Franche-Comté region. In 2024, he moved his restaurant, l’Evidence, to the VillaPona hotel in Digoin, thus offering his cuisine a setting that matches its excellence.

Its cuisine is a tribute to quality local products, highlighting the terroir and the diversity of the region. Generous and authentic, his cuisine reflects his commitment to local producers and his artisan friends. Through his dishes, he invites his guests to discover the gastronomic richness of Burgundy, in a welcoming and warm setting.
